ICIF released an atlas.
The Italian ICIF University of Gastronomic Sciences has released the atlas "The Ark of Taste in Ukraine", which is a unique catalog of Ukrainian traditional products and dishes. The atlas was published in open access. Such atlases have been created since 2017 within the framework of the Slow Food movement, the purpose of which is to prevent the destruction of local food cultures and to oppose fast food. The Ukrainian atlas consists of 218 pages and 85 traditional products and dishes of Ukraine, information about their regional features, connection with the biocultural space, methods of use or preparation. In addition, the atlas contains many recipes for traditional dishes, including Lviv cheese cake, uzvar, paska, gayoshi, crackling cakes, or sycamore pie. Thank you!!
